The world of food has rapidly evolved over the
last few decades. Why people choose what, how
and when they eat responds to a variety of
reasons which all have undergone rapid changes.
Nutritional aspects as well as culture, religion,
economics, brand, experience and personality
are all part of the equation.
The changes in food consumption have been
enabled by developments in agriculture and
food manufacturing, creating for many of us
a virtually unlimited amount and variety of foods.
Currently, the limits of intensive food production
are increasingly being clear, with the sustainability
of food production becoming a major theme.
We believe that creativity and passion for
food, together with new insights in food science
and technology, will help to create foods with
are nutritionally balanced and highly appealing
to consumers, while limiting the impact on the
environment and sparing resources at the
same time.

Central to Food Concept & Physical Design
are the concept sessions. The purpose of
the concept sessions is to develop novel
concepts for foods and for ways consumers
are dealing with food.
From mid-2011, the concept sessions can
be organized at our renovated mill. We do not
stop at the concept sessions: we can provide
follow-up by proposing solutions to the technical
issues to be dealt with in industrializing and
commercializing your product.
And we strongly encourage you to go one
step
further and have us assisting your staff in
the full technological implementation of the
new food concepts.

We apply approaches based on science and
technology of food and nutrition, together with a
passionfor food, to develop new approaches to
a sustainable food producction.
We specifically focus on reducing the impact of
food production on the environment. This includes
reducing energy usage, waste and optimizing
food storage conditions.

The renovated mill at Flüh will be equipped
with a state-of-the art professional kitchen with
advanced cooking technology.
The main purpose of the
kitchen is to enable
on-site exploration of novel food concepts, in
conjunction with the concept sessions.
In addition, we are involved in the field of
science-based cooking. In collaboration with
chefs, scientists and technologists we explore
the physico-chemical basis of cooking, and we
explore ideas for new dishes.
Some of these dishes have made a mark in
restaurant cooking, several other
ones are being
evaluated for commercial development.

Food Concept & Physical Design is
providing tailored technical and scientific
trainings on a number of key topics in food
science and technology.
The trainings focus on a combination of
theory
and food applications. We often adapt
the trainings to include practical case studies
dedicated to products and processes relevant
for your company.
The learnings can therefore immediately be
put into action, which strongly enhances their
practical impact.

The renovated mill at Flüh will have meeting
facilities for up to 15 persons in an appealing
and motivating environment. Refreshments
and optionally lunch and/or dinner can be taken
care of.
The village of Flüh additionally offers two
high-level gastronomic restaurants in close
distance (500 m). The environment of Flüh
also invites for a walk or hike, with interesting
destinations being the beautiful pilgrimage
village of Mariastein and the impressive ruins
of the Château de Landskron, just over the
border with France.
